Feature Friday- Fresh Homemade Salsa!

Last week for the photo challenge, the theme was food.  One of my favorite subjects, by the way.  Anyway, my cousin Debi sent me this photo at the beginning of the week, telling me that these are the fresh ingredients (many of them from her garden) that her husband used to make fresh salsa this week.

Have I mentioned before that I’m on a diet?  I’ve been on one since the end of March.  I’ve lost thirty pounds so far.  I’d literally eat my arm off to get hold of some fresh salsa right now.  Spread all over a big bowl of tortilla chips.

Seriously.

She asked me to add the photo to my photo challenge for last week, but I’m afraid that I heard nothing after the word, “salsa”.  So I asked her if she and her hubby would be willing to part with the recipe.  I can’t have it, but I’m betting my readers just might enjoy a summer recipe fresh from the garden.

And they were kind enough to share.  So here you go.  Fresh from the garden:

Scott’s Homemade Salsa

 Ingredients:

  • 4-6 Medium Size Tomatoes
  • One small Onion
  • 2 Fresh Jalapenos
  • 1 Clove Garlic, Minced
  • 1/2 Cup Cilantro
  • 1/4 tsp. salt
  • 1/4 tsp. Sugar
  • 1/4 tsp. Cumin
  • Juice of one Lime
Blanche Tomatoes.  Peel and chop into pieces and add to blender.  Chop jalapenos and onion and add to the blender.  Add remaining ingredients and pulse until desired consistency.  Eat.

I used this recipe to make homemade salsa tonight. It was really good! I did eat it with chips…you were right…salsa and chips are just made for each other. I will be making this again!

Congrats on the weight loss. I cannot fathom a diet that won’t let you eat salsa. You don’t have to use chips. You can garnish meat with it. Good recipe. Thanks for sharing it.

Ummmmm! Comfort food to the Max! The only difference between yours and mine is that I use chile powder instead of cumin – but the cumin sounds good too!

congrats on weight loss, I’ve been on a Dieabetic diet for a year now and at first lost 20 pounds but then gained it back now I’m stuck !

That’s a beautiful picture of the vegetables. The recipe is so simple to use. I bet it was yummy!
