Banana Pudding Cupcakes- a quick and easy snack!

I’m a huge fan of quick and easy snacks.  Heck, any recipe that takes no time to make and tastes good is totally up my alley.  I love to craft.  Hanging out in the kitchen?  Not so much.  So I am always on the look out for a yummy recipe that makes everyone happy, yet takes minimal time to make.  Banana Pudding Cupcakes fit the bill!

These sweet cupcakes are not only quick and easy, but they are incredibly moist and full of banana flavor.

You see, I wanted to take advantage of a great coupon I found:

(SAVE $1.00 when you buy ONE (1) tub of COOL WHIP Topping (any size) and TWO (2) boxes of JELL-O Pudding Mix  *while supplies last).

Of course I had to come up with a plan!  So I went to Walmart and located the Jello pudding section.

There are so many things that you can make with Cool Whip and pudding mix!  The hubby is rather picky and only likes three flavors of pudding: Banana, Chocolate and Pistachio.  So, I’m limited a bit, but after checking out all the other flavors, I decided to try my hand at creating some cupcakes with major banana flavor: Banana Pudding Cupcakes!  Want to know how?

Banana Pudding Cupcakes

1 box yellow cake mix
1 box Jello Banana Cream Instant Pudding Mix
2 ripe bananas
1 cup water
1/4 cup vegetable oil
4 eggs
Kraft Cool Whip
Vanilla cookies (for decoration)

In large bowl, combine the yellow cake mix, eggs, water, and oil.  Add in the pudding mix.

Mash two bananas and add them into the large bowl.  Beat well with a mixer for several minutes.

Pour the batter into a greased cupcake pan.  (This makes a lot.  I had to use several cupcake pans!)

Bake at 350 degree oven for about 20 minutes, until golden on top.  Your house is going to smell pretty awesome about now…

The pudding mix added to the cake mix will make these cupcakes exceptionally moist.  And they are totally good plain, but we want to spiff the look up a bit.

In my house, the best way to spiff up a dessert is Cool Whip!  In fact, a little cool whip makes a boring little snack very special.  So to the top of each cupcake, add a dollop of Cool Whip, stick a vanilla wafer into it, along with a banana slice.

The result?  Awesome-ness!  Quick and easy, the kids will love it, and even my picky hubby was thrilled.
