McCafé Coffee and Homemade Apple Dumplings!

We have moved into our RV full time!  I finally was able to sit down this morning with a fresh cup of  McCafé coffee, and a sweet homemade Apple Dumpling.  But I have to tell you that it has been an incredibly stressful week.  We have been working non-stop since Friday trying to load the RV and get rid of anything personal in the house.

I didn’t realize how much we resemble pack rats until I started going through drawers.  I lost count of how many bags of trash we threw away, how many bags we had to have shredded, how much stuff was donated to the Kidney foundation, how much crap we gave away.  And we still have a house full of stuff!  Ugggghhh!!

The Estate Sale started yesterday, and I’m really hoping that they can sell the vast majority of our furniture.  Oh, and then we really need to sell the house. Stress is probably going to be my friend for the next few weeks.

So, McCafé coffee and Apple Dumplings it is!  The best way to start what will inevitably be another stressful day!  In an effort to delay another day of sorting and cleaning, I thought I’d share with you a little info on my new favorite coffee and my recipe for Homemade Apple Dumplings!  Are you game?

I recently discovered McCafé coffee while stocking up on other supplies at my local Walmart.  We bought the Premium Roast.  There are a total of eight different flavors to choose from!  McCafé coffee is made with 100% Arabica Beans harvested from the rich soils of coffee-growing areas of the world, making it a premium quality coffee.  And it comes in premium bags or coffee pods!  

It is not only very simple to make, but we both love the flavor!

And it goes very well with my mother’s recipe for Pennsylvania Dutch Apple Dumplings!

Many of Mom’s recipes have been passed down for generations, and fortunately for us, my mother has shared them!

Eb’l Dumpling (Apple Dumpling)

2 cups sifted flour
2 tsp. baking powder
1 tsp. salt
6 tablespoons butter
1/2 cup cold milk
6 medium sized apples
1/2 cup sugar
2 tsp. cinnamon

Mix together the flour, baking powder and salt.  To create the dough, she used a food processor, but you can always do this with a mixer.  Add in the butter  and milk and mix well.

 This creates a nice dough.

Separate the dough into two equal portions, wrap in plastic wrap and refrigerate for one hour.

 Peel and core the apples and place them in a bowl of cool water with a few drops of lemon juice to keep them from turning brown.

Once the dough has chilled.  Roll one section out with a rolling pin and use a knife to divide it into four sections.  Mix together the cinnamon and sugar in a separate small bowl.  Pile sliced apples into the center of one of the sections, sprinkle well with about a teaspoon of the cinnamon sugar mix, and then fold the dough up and over the apple pieces, moisten the edges and pinch at the top to seal.

Place them on a greased cookie sheet and sprinkle again with the cinnamon sugar mix.  Place in a 350 degree Fahrenheit oven for about 35 minutes until golden brown.

Serve warm with a bit of vanilla ice cream.  Or just plain is pretty awesome too!   Delicious!
