Cinco de Mayo Recipes and a Cash Giveaway!

In our family, we love any excuse for a party.  And Cinco de Mayo is one of those excuses!  We are living full time in our RV this year and I didn’t want this fun Mexican style holiday to get away from me without trying some new recipes on the grill!  Thanks to Old El Paso, Avocados from Mexico, and Publix, I pulled off the ultimate grilled #PublixFiesta combo-  Mexican Grilled Chicken and Avocados!

Oh, and I also have some great downloadable coupons for you and even a cash giveaway!  It’s a party, right?

Believe it or not, my RV does actually come with a stove and oven, but I love any excuse to cook on the grill.  That added smokey flavor makes things taste wonderful.  Oh and there is the fact that the husband insists on being the one to cook on the grill.  Who is going to argue with that?

So, I perused Publix and picked up an Old El Paso Hard/Soft Shell Taco Kit, Old El Paso Traditional Refried Beans, Old El Paso Mild Taco Sauce, and some yummy Avocados from Mexico!  Need some great downloadable coupons for these items and more?  Be sure to check the Old El Paso website!

Anyway, let’s talk about the food!

Mexican Grilled Chicken and Avocados

2 Chicken breasts
2 Avocados from Mexico
Olive Oil
Shredded lettuce
Tomatoes (chopped)
Old El Paso Mild Thick and Chunky Salsa (need a coupon?)
Old El Paso Traditional Refried Beans (need another coupon?)

Marinade

8 scallions (chopped)
1 tsp. garlic powder
1/4 cup olive oil
1/2 tsp. cumin
1 tsp. salt
1/2 tsp. pepper
1/2 tsp. chipotle powder
1 tsp. paprika
2 tbsp. apple cider vinegar

Mix together all marinade ingredients with a whisk.

Place the marinade and the chicken breasts in a large zip lock bag and refrigerate overnight.

Once the chicken has marinated, it is ready to grill!

While the chicken is cooking, cut up the lettuce and tomatoes.  Half the avocados and remove the seed.  Brush the cut edge of each avocado with olive oil.

When the chicken is ready to pull off the grill, add the avocados face down on the grill.  Cook for 5 minutes.

Grilled avocados have an added smokey flavor and taste great on a bed of chopped lettuce and tomatoes, topped with Old El Paso taco sauce, shredded cheese and sour cream.  Add a side of Old El Paso refried beans to your Grilled Avocado and Mexican Chicken, and you have a great festive Cinco de Mayo meal!

A spicy Mexican combo made special with the grill!
Ingredients
  • 2 Chicken breasts
  • 2 Avocados from Mexico

  • Old El Paso Traditional Refried Beans (need another coupon?)

    All of the recipes are fantastic. I would start by offering everyone a drink of the Frozen Mango Cocoritas. Then offer an appetizer of the Easy Cheesy Bean Dip. For the main course, I would serve the Slow Cooker Creamy Chicken & Green Chile Tacos. For dessert, I would serve the Margarita Cupcakes. I think all of these recipes would be a hit for a great meal.

    I checked the links and chose-DRUM ROLL, please!-Roasted Sweet Potato Tacos. Wow! Who-da-thunk, huh? But on the guac I am sticking with my own, which is more like avocado paste (fresh avocados, mashed with a fork) seasoned with just enough Bufalo Brand Chipotle hot sauce. Talk about smoky flavor!

    I clicked on the 3 links and saw the coupons but no lead for recipes , however I am technology challenged … Oh dear. Any way I love your idea of grilled avocados!! I have been trying to acquire a taste for the little darlins’ as I know their good for us, so this sounds very interesting. Thank you. And hey, who doesn’t love a man and his grill right?? I was wondering how that packs up for road time? I think I’d even tie it down on the roof LOL
