Grilling out? 3 Simple Summer Recipes!

We have been working at the KOA in Bar Harbor, Maine for the last month and with the summer season on top of us, and hours increasing, it is important that I find quick ways to fix meals!  Since our main method of cooking is the grill, I’ve taken to doing some experimenting.  This week, I put together an amazing meal using Suddenly Salad Pasta Salad, and Spicy Chipotle Burgers and Corn on the Cob cooked on the grill!

The great thing about Suddenly Salad is that you can mix it up ahead of time, pop it in the fridge and it makes a complimentary side dish for anything you make on the grill!  Folks will think you were slaving in the kitchen for hours.

Truth be known, all you have to do is boil the pasta for about 10 minutes, add the spice mix (included in the package), add a bit of olive oil and water- and there you go!  Suddenly Salad Classic is our favorite and we love it just as it is, but if you want variety, there are lots of great stir-in ideas on the package!

Spicy Chipotle Burgers
Recipe Type: Grilling Recipes

Serves: 4
A fast and spicy meal that cooks quickly on the grill for a delicious summer treat!
Ingredients
  • 1 lb. Ground Beef
  • 1/2 Onion, chopped
  • 1 Small can Chipotle Chili Peppers in Adobo (chopped)
  • 1 tsp. Cumin
  • 1 tsp. Salt
  • 1/2 tsp. Pepper
  • Sliced Jack Cheese
  • Sliced Avocados
Instructions
  1. Mix together the ground beef, chopped onion and chopped chipotle peppers
  2. Add in the cumin, salt and pepper and form into patties
  3. Cook on a grill for about 15 -20 minutes until done.
  4. Place on bun with a slice of Jack Cheese and sliced Avocados.
  5. Enjoy!

The Spicy Chipotle Burgers go well with the easy Suddenly Salad Pasta Salad, and for another easy meal addition, let’s look at grilled corn!

Simply remove the husk and silk from fresh corn, brush on olive oil, and sprinkle with garlic powder and salt.  Then roll in aluminum foil and place on a hot grill.

Both the corn and the burgers only need to cook for about 15 – 20 minutes.

We ate this yummy meal this evening at the picnic table while watching the sun set over the park.  Want to see the view?

Beautiful, isn’t it?   There is nothing nicer than sitting down to a nice summer meal fresh off the grill and watching a beautiful sunset.

    Oh they all look so good! I would make the Quick Antipasto Pasta Salad first! I love getting something like that at the deli….would LOVE to be able to make my own at home! YUM!
