Easy Cheesy Stuffed Pork Chops and Mashed Sweet Potatoes!

With winter approaching, it is always fun to whip up some “comfort food” for a nice meal in the evening.  My favorite comfort food always involves sweet potatoes, and stuffing.  The hubby loves pork chops.  So I decided to combine them for a quick and easy meal that can be put together in no time.   This yummy recipe uses Kraft Natural Shredded Cheese for extra flavor!

Fabulous!  Creamy sweet potatoes with a touch of brown sugar, cinnamon and maple syrup.  And the pork chop is stuffed with bread crumbs, mushrooms, shredded cheese and spices.  It’s like a holiday dinner but without the mess, the chaos, the family drama, the kids running around, and Aunt Ethel silently judging your house cleaning as she casually runs her finger across the top of your fridge.

You can find their varieties of Kraft Colby & Monterey Jack, Cheddar, Mexican, and Mozzarella Natural Shredded Cheese in the dairy section of your local Walmart.

Cheesy Stuffed Pork Chops

4 (1 inch) pork chops
1/2 cup chopped fresh mushrooms
1 cup Kraft Colby & Monterey Jack Natural Shredded Cheese
1/4 tsp. salt
1 cup dry bread crumbs
Dash of pepper
1/2 tsp. dried parsley
1 beaten egg
1/4 cup melted butter

In a bowl, mix together the bread crumbs, Kraft Natural Shredded Cheese, chopped mushrooms, salt, pepper, parsley, egg and melted butter.

Use a sharp knife to slice the pork chops horizontally towards the bone, creating a pocket to place the stuffing in.

Fill the pocket with the cheesy stuffing mix.  Wrap in aluminum foil.

For this recipe (and because I live in a RV), I had the hubby cook the chops on the grill.  If you choose this method, simply place them on a hot grill, cover and cook about 30 minutes until done.  Or place them in your oven and bake the chops in the oven for about 30 minutes.  Chops are done when the internal temperature registers 155 degrees on an instant-read thermometer when inserted in the pork.

Easy Mashed Sweet Potatoes

5 sweet potatoes, peeled and chopped
1/4 cup butter
1/4 cup packed brown sugar
3 tablespoons maple syrup
1/4 teaspoon ground cinnamon
1/4 teaspoon salt

Place the chopped sweet potatoes in salted water and boil for about 20 minutes until they are tender.  Strain them and place them in a large bowl.

Add in the brown sugar, melted butter, maple syrup, cinnamon and salt.

Mash with either a potato masher or a mixer.  Serve hot.

Cheesy stuffed pork chops and sweet potatoes go together well.  They are the perfect pair!  Like peanut butter and jelly, Cheech & Chong, Ben & Jerry, unicorns and glitter, zombies and brains, Mary Kate & Ashley….

Well, they just go well together.  Take my word for it.

You’ll have to excuse me.  I guess I’m a little giddy because my refrigerator is dusty and Aunt Ethel hasn’t the slightest idea.
