Glamping like a boss! Skillet 3-Berry Cobbler and grilled pizza

As full time travelers living in our RV, you could call us campers.  But those folks that actually camp in tents and cook over fires will scoff at us.  We are more “glampers” than campers.  We love to have a small bit of luxury around us, like table linens on our picnic table, real dishes, silverware and fun decorations.  With a Walmart around just about every corner, it is easy to “glamp” in style!

The hubby loves to cook on the grill.  Which means I go out of my way to come up with great grill friendly recipes for him to make.  I mean, if the hubby wants to cook, I should support that habit, right?

This week, he cooked up some amazingly delicious 3-Berry Cobbler, corn on the cob, and even a Freschetta® Brick Oven Crust Pepperoni & Italian Style Cheese Pizza.  And he did it all on the grill!

This is our new digs in St. Petersburg, Florida.  We will be here working at the campground until early spring when we will move onto our next camping job at the Grand Canyon in Arizona.  We are currently living among the winter “snowbirds” who travel down to Florida every year in order to avoid the winter.

Personally, I love the cold.  Unfortunately, our RV does not.  So we have to go where the weather is milder.

Our new set up required more glamping gear!  I found some fun linens for our picnic table along with some cute camper lighting.  You know, for ambiance!

Oh, and of course a little trinket from Maine- my lobster salt and pepper shakers.  Awesomeness.

So how do you make pizza, corn on the cob and cobbler on the grill you ask?  Well, let me show you how true glamping cooking is done!

How to cook pizza on the grill

On days when you would love a quick meal, but don’t want to heat up the camper, you can easily cook a frozen pizza on the grill.  Our favorite to use is Freschetta® Brick Oven Crust Pepperoni & Italian Style Cheese Pizza.  We love it because the crust is made like fresh baked bread with only natural yeast and no chemicals.  To us, it has a superior taste.  And it cooks so well on the grill!

  • Leave the pizza frozen until you want to make it.
  • Preheat your grill.  We use charcoal, so you want to wait until all the coals are white and heated to capacity.
  • Place a double layer of foil over the grill and place pizza on top.
  • Cover the grill and allow it to cook for 13 to 16 minutes.

The pizza is done when all the cheese is melty and the bottom of the crust is golden brown.  If you have never had pizza made on the grill before, you really need to try this.  The grill adds a wonderful smokey flavor to the crust.  We have decided that this is truly the best way to make pizza!

Making Corn on the Cob on the Grill

Have lots of folks coming for your glamping meal?  Here is a great way to make up some tasty corn on the cob!  Simply remove the husk and silk from fresh corn, brush on olive oil, and sprinkle with garlic powder and salt.  Then roll in aluminum foil and place on a hot grill.

The corn only needs to cook for about 15 – 20 minutes.

It’s delicious!

So…now let’s talk dessert.  I want you to know that this particular recipe hit it out of the park this week.  We had camping coworkers surrounding our camper when this 3-Berry Cobbler came off the grill.  Served with cold vanilla ice cream, it hit the spot on this unusually warm November day!

Skillet 3-Berry Cobbler

4 cups frozen mixed berries
1/2 cup sugar
2 tbsp. instant tapioca
1/2 tsp. cinnamon
1/4 tsp. salt
1 cup crushed Honey Maid Graham Crackers
1/3 cup flour
3 tbsp. brown sugar
1/3 cup butter (softened)

For this recipe, you will use a cast iron skillet!  This pan is a must have for any true glamper!  It cooks evenly, nothing sticks to it, and it works so well on the grill.

Mix together the frozen berries, sugar, tapioca, cinnamon, and salt.  Allow the mixture to sit for about 15 minutes, stirring it occasionally.  In the meantime, heat up that grill!

Place the berry mixture into your cast iron skillet.  Cover it with foil and place over the hot coals. It will need to cook for about 30 minutes.

While the berries are cooking, it is time to put together the graham cracker topping.  Create about one cup of crushed graham crackers.  I used a zip lock bag and a rolling pin to crush mine.  Just place them in the bag and smack them around a bit.

In a bowl mix together the graham cracker crumbs, flour, brown sugar and butter.

After about 30 minutes, your berries should look like this!  Yumm!  I turned around and we were already surrounded by hungry looking glampers!

Add the topping mixture, and re-cover the pan with foil.  Cook for an additional 10-15 minutes.

Remove from the heat and serve with cold vanilla ice cream!

Now this is camping in luxury!  The true glamping style!
