Since arriving in Florida for the winter, our goal has been to eat a bit healthier. It is a bit easier here since veggies are grown year round! My current quest is “life with less sugar” and I found a way to cut down on sugar using Truvia Spoonable Sweetener as a replacement. This week I tried it out with a Slow Cooked Pulled Pork recipe.
Yep, another slow cooker recipe! I love the fact that I can come home from work and dinner is waiting on me!
I found Truvia Spoonable Natural Sweetener at Walmart. Adding it to my coffee in the morning has become a regular routine. It is a great choice for those that want to reduce calories, or for those looking to just reduce sugar in their diets.
In a quest for better for you food, we decided to check out some of the local U-pick farms to see what they have to offer.
Strawberries, greens, cabbage, broccoli, lettuce! Seems that winter doesn’t really come to Florida.
…and looky there. Those are brussels sprouts! The hubby had to look the other way while I took a photo. Brussels sprouts are not allowed in the house unless he happens to be out of town. He doesn’t even like to look at them.
But they are pretty cool, aren’t they?
So…want to know how to make some awesome Slow Cooked Pulled Pork BBQ?
Slow Cooked Pulled Pork BBQ
2-3 lbs. rump roast
1 15-oz. can tomato sauce
1/4 cup cider vinegar
3 tsp. Truvia Spoonable Sweetener
1 tsp. salt
2 tbsp. chipotle seasoning
1/2 cup chopped onion
Place the thawed rump roast into the bottom of your slow cooker. In a separate bowl, mix together the tomato sauce, spices, onion, vinegar and Truvia sweetener.
Pour the sauce mixture over the roast.
Cover and allow to cook on low for 6-8 hours.
I love this recipe. After a long day at work, I can come home to the smell of amazing pulled pork BBQ! Just look how the meat separated. The slow cooker does the job of making the meat so tender, it just falls apart!
Spoon the meat onto buns, or for a no-bread option, consider spooning it over baked potatoes!
While at the U-pick farms, we picked a beautiful head of cabbage. All the better to make coleslaw with! Here is my recipe for a simple coleslaw that goes well with pulled pork BBQ.
Yummy Coleslaw
1/2 cup mayonnaise
1/4 cup milk
1/4 cup buttermilk
2 tbsp. Truvia Spoonable Sweetener
1-1/2 tablespoons vinegar
2-1/2 tablespoons lemon juice
1/2 tsp. salt
1/4 tsp. pepper
8 cups shredded cabbage
Whisk all ingredients except the cabbage together in a large bowl. Stir in the shredded cabbage. Refrigerate for about 2 hours before serving.
How easy is that?
