Easy Grilled Chicken Pesto Pasta!

We really enjoy flavorful, homemade meals.  I’m always on the look out for simple meal ideas that I can put together without a whole lot of thought or extra preparation.  After all, I work at a campground!  Life should be simple, right?

This week I put together a super easy Grilled Chicken Pesto Pasta using Barilla Traditional Pesto and Barilla Pronto Pasta.

Getting off at 7:00 PM means we are not only hungry, but would really like something other than a hotdog over the campfire.  (Even though that never really gets old)!

This is an easy recipe and a delicious hearty family meal.

Grill the chicken ahead of time and you don’t have to put out a lot of effort to get this on the table in less than 30 minutes.  That is my kind of cooking!

Easy Grilled Chicken Pesto Pasta

1 lb. grilled chicken breasts, diced (you can grill it ahead of time and freeze it- perfect for a quick meal)
1 (12 oz) box Barilla Pronto Penne
1 jar Barilla Traditional Basil Pesto
3/4 cup parmesan cheese
salt and pepper to taste
1/4 cup roasted pine nuts

Barilla Pronto Pasta is perfect for one-pan pasta meals with no need to wait for water to boil, and no draining required.  It is available in several varieties including half-cut spaghetti, penne and rotini.  For this recipe, I used penne.

Simply add 3 cups cold water to a 12″ pan.  Pour in the pasta and turn the heat on high.  Set your timer for 10 minutes, stirring every few minutes.

After 10 minutes, the pasta has soaked up all the water and is ready for the rest of the ingredients!  Barilla Pronto not only saves time, but uses about 60% less energy and less water.  One Pan. No Boil. No Drain.

Add in the Barilla Pesto Sauce, grilled chicken, parmesan cheese, roasted pine nuts and salt and pepper.  We love Barilla Pesto Sauce for this recipe because it combines authentic Italian herbs to create a flavor that is balanced and delicious.

Mix well and serve!

I served it with baked wheat rolls and a nice green side salad.  The hubby was impressed!  I told him it was tough and I had been working hard in the kitchen all evening, cooking over a hot stove.  I stopped just short of dabbing some flour on my nose.

He told me that standing over a hot stove was good for me.  No sympathy here.  ha!  And then he ate two servings.  I think he might have liked it.
