Great Tailgating Recipe- Spicy Meatballs & Sausage Kebabs!

Well, apparently college football season is upon us.  I’m what you would call a “football widow”.  The hubby and his friends watch football all day every weekend and I hole myself up in the coach, turn up the stereo and craft.  But not before I put out a nice spread.  I love an excuse to grill out and this week, I prepared for Tailgreatness with a yummy Spice Meatball and Sausage Kebabs recipe!

Between you and me, the sound of football puts me to sleep.  Something about the drone of fans and the repetitive slow motion plays.

Ask me who I’m rooting for in any given game and I will point out the team wearing my favorite colors.  Oh, and do a bit of oggling.  Because who can help it when you are looking at a whole mess of guys in the equivalent of spandex tights.

But, I’m always up for a challenge and if the yard is full of football fanatics who may have bet on sites like Betend, then I plan on putting my spin on it.  Here is my recipe this week.  It is a spicy version of Kebabs that is certain to put a bit of spark in any tailgating party.

Spicy Meatball & Sausage Kebabs

1 bag precooked frozen meatballs
1 lb. smoked sausage
peppers
onions
mushroom

Marinade (make 2 separate batches)
3/4 cup olive oil
1/4 cup vinegar
1 tsp. garlic powder
1 tsp. onion flakes
2 tsp. cajun seasoning
1/2 tsp. salt
1/2 tsp. pepper
1 tsp. oregano

Whisk together the marinade ingredients in a medium size bowl.

Cut the sausages into 1″ slices.  Place the sausages and meatballs in a quart size ziplock bag and pour in the marinade.  Seal the bag.

Cut the onions and peppers into large slices.  Clean the mushrooms, removing the stems.  Place the vegetables in a separate quart size ziplock bag and pour in a second batch of marinade.  Seal the bag.

Refrigerate both bags overnight for best results.  (Keep veggies separate from meat).

Place the marinated pieces onto skewers.

Any leftovers can be cooked in a separate pan.

Place them on a heated grill and cook!  Keep in mind that both the meatballs and the sausage are already cooked.  So your plan here is to heat everything up, and brown it nicely with a touch of charcoal flavor.

Preparing for a bunch of college football tailgating involves lots of great food, a fun outdoor setting, and plenty of seating.
