We took another trip in our RV this past week and visited the cool crafty town of Franklin, NC.  While we were there, I tried out my latest campfire recipe, Teriyaki Orange Beef Shish Kebabs.  This is an easy recipe that you can make ahead of time so that when it comes to dinnertime while on vacation, you don’t have to put out a lot of effort.  That is my kind of cooking!

And they are pretty darn good too!

Since we started RV camping last year, I have gotten into a decent preparation routine for camping trips.  (Although some would argue that RV camping is not quite the equivalent of the rustic version of camping).  Me?  I don’t do tents.  I have a thing about sleeping where there are snakes and creepy crawlies.

And besides that, what could be better than driving around with my own portable billboard?

Preparing for a trip requires some thought.  While we are driving a self sufficient motor home, there are things you have to consider.  There needs to be enough food, gas, oil, and supplies packed for each trip.  The dogs need all their essentials such as leashes, poopy bags, harnesses, chew toys and treats… Which always means a trip to Walmart to take advantage of their everyday low prices.

But one of my biggest essentials turns out to be something as simple as Wet-Nap Antibacterial Wipes.  They are important to carry along for many reasons, but the biggest reason is water conservation.  Our water tank is just so big and when we are on a long trip, it is important to ration the water.  Wet-Nap wipes make it easy for us to keep our hands clean without having to use up the water supply.  You can find them in the napkin aisle.

And just FYI.  If you are on need of a craft fix, the little town of Franklin, NC, will totally handle that for you.  I couldn’t have asked for a nicer town to visit.  The poor husband had to tolerate a visit into each of these stores and galleries because I certainly didn’t want to miss anything.  Wow.

But let’s get back to dinner.  I love to make simple meals when camping and nothing tastes better to me than food cooked on the grill or over a fire.  With that in mind, I brought the ingredients to make my Teriyaki Orange Beef Shish Kebabs.  Want to know how?

Teriyaki Orange Beef Shish Kebabs

1 lb. cubed beef
1 lb. sausage
peppers (green, yellow and red)
mushrooms
1/2 onion
Marinade:
1/4 cup teriyaki sauce
1/3 cup orange marmalade
1 tbsp. vinegar
1 tbsp. vegetable oil
1 tbsp. dark brown sugar

 Mix all marinade ingredients together in a medium bowl.

 Use a gallon size ziplock bag and pour the marinade into it along with the sausage pieces and beef cubes.  Create a separate marinade batch and marinate the mushrooms separately in their own ziplock bag.  (I don’t like to mix raw meats and veggies).   Put both bags in the refrigerator and marinate overnight.

Just before cooking, go ahead and cut up the peppers and onion and prepare them for the skewers.

Oh, a few cool things about Wet-Nap wipes: they are softer and stronger than they used to be, and they moisturize with aloe!  But I have to say that they also seem to get the smell of onions off my hands almost instantly!   Now if I could just find something to keep me from crying all over the place when I cut them!

String your meats and veggies on wooden skewers.  Kind of a messy process, but totally worth it.  Keep your Wet-Nap wipes close and you won’t have to worry about sticky hands.

Then place them on a hot grill.

You will need to cook them until the beef is done.  In our case, about 15 minutes over hot coals, turning them a few times over the time period.  For even cooking, it is sometimes necessary to move the kebabs around a bit to give them all a chance at the center of the coals.

These kebabs turned out fabulous!  They have a sweet and spicy mix of flavor with the tang of teriyaki and the sweetness of marmalade.  A simple meal to make, but so full of flavor and fun to eat too!
