On a chilly evening, a hot meal is a real treat. Fix up a batch of Mom’s homemade Lasagna, and your meal just plain becomes special! So, I headed to Safeway and with the help of Barilla Lasagna and Barilla Traditional Pasta Sauce, I’m going to share with you my Mom’s personal recipe, handed down from her Mom!
When I got married years ago, I moved several states away from the family to a remote Air Force Base in Rantoul, Illinois. Remote for me because I have always lived in big cities, and always lived close to family. It was winter time and it wasn’t long before I was surrounded in several feet of snow and missing the warmth of home and family. Being a novice cook, I found myself on the phone more times than not asking mom for instructions on whatever meal I was trying to make.
When I eventually returned to Georgia, my mother presented me with a special gift. It was a hand-written book of all the family’s favorite recipes. Many of them handed down for generations! Each page is meticulously written by my mother and includes who the recipe originally came from and lots of great tips and techniques handed down from both sides of the family. I couldn’t have asked for a nicer gift!
So, today I’m going to share with you one of my favorites from that book. Perfect for a cold winter evening. Mom’s Homemade Lasagna!
For this recipe you will need:
1 Box of Barilla Lasagna Noodles
1 (15 oz) container Ricotta Cheese
1 Medium Container Cottage Cheese
1 lb. Shredded Mozzarella Cheese
2 eggs
1 Jar Barilla Traditional Pasta Sauce
1 lb. Ground Beef
1 small Onion – chopped
salt and pepper
Begin by putting a large pot of water on the stove for the lasagna noodles. Bring the water to boil, and add about a teaspoon of olive oil to help prevent the pasta from sticking together.
In a large bowl, mix together the Ricotta cheese, Cottage cheese, eggs, and half of the Mozzarella Cheese.
Once the water starts to boil, add the lasagna noodles. Cook them for about 8-10 minutes. You want them soft, but not cooked entirely.
Brown the ground beef and chopped onions. Add salt and pepper to taste.
Once the meat is browned, drain off excess grease and then add in the Barilla pasta sauce.
Now we are ready to assemble! Drain the noodles and add cool water so that you can handle them. Pour the rest of the mozzarella in a bowl for easy access. This recipe makes one large lasagna or two smaller 8″ pans of lasagna. Since it is just my husband and myself at home, I made two lasagnas. One for the freezer and one for tonight’s dinner.
For the layering process, begin and end with the meat sauce. Begin by adding a thin layer of meat sauce to each pan.
Add a layer of noodles, folding them to fit.
Add a thick layer of cheese mixture, then top with meat sauce. Add another layer of noodles, a layer of cheese, a layer of meat sauce, a final layer of noodles, and top with the leftover mozzarella cheese.
Here they are ready for the oven! Bake in a 375 degree oven for 30- 45 minutes until heated all the way through.
Once they have cooked, allow them to sit for about 10-15 minutes before serving. And there you have it! Mom’s secret lasagna recipe! A perfect way to warm up a chilly evening!
