Easy Dinner Idea! 3 Cheese Mac from the Crock Pot & Barber Foods Chicken!

I’m always on the look out for simple meal ideas that I can put together without a whole lot of thought or extra preparation.  After all, I work at a campground!  Life should be simple, right?  We’ve always been huge fans of Barber Foods delicious chicken breast entrees.  They take about 30 minutes to bake, so with that in mind, I came up with an easy 3 Cheese Macaroni side dish to go along with them!

I’ve been talking a lot lately about crock pot cooking.  It is a great option for us since we tend to work evenings.  Getting off at 7:00 PM means we are not only hungry, but would really like something other than a hotdog over the campfire.  (Even though that never really gets old)!

I have a large stash of Barber Foods stuffed chicken breast in my freezer.  We love them!  Did you know that they are celebrating their 60-year anniversary?  To celebrate, they have actually improved our favorite stuffed chicken breast with a new blend of seasonings, authentic home-style breading, more flavorful chicken, improved ingredients and cheeses, and more of “The Good Stuff”.

We loved the old recipe and the new recipe is even better!  The breading is crispier, the seasonings have been turned up a notch and yummy cheeses makes them a fabulous choice for a delicious dinner.

So…I couldn’t help but stock up.

So let’s create something yummy to go with our entree!

3 Cheese Macaroni from the Crock Pot

12 oz. Ziti Macaroni (uncooked)
1 cup sharp cheddar cheese cut in cubes
1 cup shredded colby cheese
1 cup shredded monterrey jack cheese
1 can evaporated milk
1-1/2 cups milk
1/2 tsp. dry mustard
1/4 tsp. salt
1/4 tsp. pepper
paprika (optional)

Spray your crock pot with spray oil to prevent any sticking.  Add macaroni and all three cheeses to your crock pot.

Pour in the evaporated milk and regular milk.  Mix well.  Cover and set the crock pot on low for 1 hour and 30 minutes.

Now it is time to add the seasonings!  Your macaroni should be al dente at this point.  Stir well to mix and break up any cheesy pockets and add in dry mustard, salt and pepper.  Cover and allow to cook about 30 minutes longer.

Now for the hard part.  Which Barber Foods stuffed chicken breasts to try?  Their improved recipe even came with a new look that honors their heritage and their hometown of Portland, Maine.

Yes, Maine!!  They are our neighbors!

We decided to go with the Cordon Bleu for the evening. Yumm!

Simply put the frozen chicken into a 400 degree oven for 30 minutes!  How easy is that?  And perfectly timed to come out when the 3 cheese macaroni is done to perfection. Remove the chicken from the oven when the internal temperature is 165° F.

After about 30 minutes, you have perfectly cooked 3 Cheese Macaroni and yummy Barber Foods Chicken Cordon Bleu to go along with it.  Looks like I slaved for hours in the kitchen doesn’t it?

Maybe I should add a dab of flour to my nose?

Ingredients
