Party with Chorizo Stuffed Grilled Peppers!

With football season upon us, I find myself many evenings sitting outside with Dave while he watches the games.  Yep.  We have an outdoor television.  Seems that the only time we use it is for football.  But I have to say that it is a great way to meet the campers around us and enjoy a fun evening!

This week, I decided to make a party of it (our version of tailgating).  I went to Family Dollar, picked up some Coca-Cola™, Diet Coke®, Sprite, and Wise Chips.  And…I put together one of my favorite grilled appetizers – Chorizo Stuffed Grilled Peppers!

Chorizo sausage is the secret to these yummy appetizers.  They take just minutes to put together, very few ingredients, and pack a punch when it comes to taste.

Want to know how to make them?

Chorizo Stuffed Grilled Peppers

12-15 small sweet peppers
1 lb. Chorizo Sausage
1/4 large onion, chopped
Olive oil spray
Monterey Jack Cheese

• Wash the peppers, slice them in half lengthwise.  Clean out seeds.
• Brown the Chorizo sausage and chopped onions in a skillet until thoroughly cooked.
• Place peppers cut side down in shallow dish along with about 1/2″ of water.  Microwave for about 4 minutes to soften peppers.
• Spray back sides of peppers with olive oil spray.

• Fill each pepper with sausage mixture and top with a thin slice of Monterey Cheese.

• Place on heated grill and cover grill.  Cook for about 5 minutes, just long enough to sear the bottoms of the peppers and melt the cheese.

This yummy recipe goes great with Coca-Cola, Sprite, Diet Coke and Wise Brand chips!  Set out a selection and you have a happy crowd!

It’s a great way to meet the neighbors, watch a few games on the television and cheer on our favorite teams!

And I have to say that the Chorizo Stuffed Grilled Peppers was a major hit with our coworkers and our camping neighbors!  It’s an easy appetizer that takes just minutes to make.  Great for any type of gathering!
