Parmesan Crusted Chicken with Wine Recipe


We plan a camping trip about every other month since we bought our RV, and I’m always looking fun things to bring with us.  Our trip to the mountains of North Carolina was coming up and when I discovered CK Mondavi wine at the grocery store, I just knew it would be a perfect tag-a-long! Who wouldn’t love a bit of good tasting wine while sitting around the campfire?

But, those sweet bottles of wine sat in my kitchen for a few days, staring at me.  I finally couldn’t resist it, and opened up the CK Mondavi Blonde Five.  Well, we needed to be sure they were good before we got out in the wilderness, right?  I decided to make a version of Parmesan Crusted Chicken with Wine!

Did you know that not only is CK Mondavi wine 100% American made and grown, but a percentage of sales goes to support veterans!  A percentage of each bottle sold between May and August of this year is donated to Intrepid Fallen Heroes (up to $50,000)!  The Intrepid Fallen Heroes Fund (IFHF) is an organization that supports the men and women of the Armed Forces and their families.  It is funded entirely by public donations and serves US military personnel that are wounded or killed in service to our nation and their families.

So fitting for the 4th of July holiday!

Ummm…yes there is a wine glass there.  I certainly couldn’t just add wine to my dish without tasting it first, could I?  Ha!

My Easy Parmesan Crusted Chicken with wine recipe makes very moist and tender chicken with great flavors of herbs and spices and of course a hint of wine.  Perfect for a warm summer day.

Parmesan Crusted Chicken

2 lb. Chicken Breasts
1 tsp Salt
1/4 tsp Pepper
1/4 tsp Garlic Powder
1/4 tsp Paprika
1/4 tsp Thyme
1/2 cup Grated Parmesan Cheese
1 tbsp. Fresh Parsley (chopped)
1/2 cup Seasoned Dry Bread Crumbs
1/4 cup Butter (melted)
1/2 cup CK Mondavi Blonde Five Wine

The Blonde Five seemed like a perfect choice for this recipe.  It is a light wine with aromas of honeysuckle and pear. Flavors of baked apple, honey and lemon zest give this ‘blonde’ a refreshing finish on the palate.  It is also a perfect accompaniment to grilled shrimp, mild cheeses, and of course- chicken!

Simply add the salt, pepper, garlic powder, paprika, parmesan cheese, and dry bread crumbs to a large zip lock bag.  Chop up the fresh parsley and add it to the mix.

Put each piece of chicken in the bag separately and shake to coat thoroughly with the crumb and seasoning mixture.  Drizzle the melted butter overtop, and then place them in an oiled roasting pan and bake at 350 degrees for about 45 minutes until nearly done.

When the chicken is nearly done, pour the wine over top of it, and then cover and bake an additional 15 minutes.  This is the trick to amazingly tender chicken!

Just look at that!  Took me no time at all to make something fabulous!  And I have to say that the wine was excellent too! I just knew it would be perfect for our trip!

We brought what little was left of our CK Mondavi Blonde Five and three other flavors- Cabernet Sauvignon, Chardonnay, and Scarlet Five.

A little note about the winery:

CK Mondavi is run by the legendary Napa Valley wine icon, Peter Mondavi Sr., a World War II veteran.  He was born on the 4th of July and 2014 marks his 60th birthday.  Hence the donations to the Intrepid Fallen Heroes Fund!  CK Mondavi is the only American made/grown wine in the “supermarket wine under $10” category! Established in the 1940s, CK Mondavi remains a family- owned business and is sold nationwide in every US State!

Our first night in the mountains was a blast.  Warm summer breezes, great company, steak and potatoes on the grill and a nice glass of Cabernet Sauvignon to go with it!  The Cabernet Sauvignon has a classically deep red color with cherry and blackberry favors that go just perfectly with steak and a warm summer night.
