I live in the deep south, so this time of year we are always looking for something light and cool for a refreshing dessert. Something simple, but delicious. Because who wants to stand around in the heat of the kitchen when there are more enjoyable things to do on a warm sunny day? I ran across Fruttare Fruit Dessert Bars in the freezer section at Kroger and a fun idea occurred to me. Let’s make a Strawberry-Banana Freezer Pie!
Looks good, right? I have to tell you that I’m still patting myself on the back with this one. Ha! The hubby and his dad consumed that entire pie in a little more than a day! And the totally cool part (no pun intended), is that it only took minutes to make! Want to know how?
Fruttare Dessert Bars come in ten different flavors. For this recipe, I chose Strawberry & Milk and Banana & Milk. Next time, I’m going to go with coconut and pineapple!
Strawberry-Banana Freezer Pie
1 box Strawberry & Milk Fruttare Dessert Bars
1 box Banana & Milk Fruttare Dessert Bars
1 ready-made Shortbread Pie Crust
Strawberries
Bananas
Allow the bars to thaw for just a few minutes. Begin with the strawberry fruit bars. Cut them off of the popsicle sticks and cut into small pieces.
Use a mixer to blend the pieces together, creating a creamy bowl of ice cream.
Pour the ice cream into the pie shell and spread it out.
Cut about 6-8 strawberries into very thin slices and layer over the top of the strawberry ice cream layer. (Note: strawberries thaw much slower than ice cream so be sure to cut them thin).
Cut the banana bars from their popsicle sticks and blend them with a mixer. Spread the banana ice cream over top of the strawberries.
Then cover and put the whole thing in the freezer and allow it to re-freeze.
When you want to serve the pie, pull it out of the freezer and add sliced bananas and strawberries to the top to make it pretty.
Allow the pie to thaw for about ten minutes and then enjoy! If you happen to have leftovers, you can always re-freeze the pie for next time. We really didn’t have that issue at my house…
