Cheesy Bacon and Potato Cups Recipe

I’m always on the lookout for easy to make side dish ideas. I have a tendency to fix the same things over and over again. Things like a side salad, macaroni and cheese, black beans and rice, and baked potatoes. So the husband was very surprised when I put together something a little different using Simply Potatoes Traditional Mashed Potatoes. I call it Cheesy Bacon and Potato Cups. My husband calls it delicious!
Look good, don’t they? Well, I have to say that you can never go wrong with bacon. These little potato cups came out creamy and delicious, baked in croissant dough cups with a center of melted cheese.
I loved the fact that this fun side dish only took 10 minutes to prep and about 15 minutes in the oven. Creating easy side dishes like this gives me more time in the craft room. Awesome, right?
So, do you want to know how?
Have you ever noticed these green packages in the refrigerated section at the grocery store? Simply Potatoes is a line of refrigerated, prepared potatoes made by the Crystal Farms Company. Crystal Farms is also known for great-tasting, high-quality cheese, eggs, butter and English muffins found in the dairy section.
Their products are fresh, never frozen, easy to make and most importantly, made with real ingredients! I particularly love the mashed potatoes because they save me so much time in the kitchen. I don’t have to peel and prepare potatoes. Just heat and eat, and they taste just like home made!
Cheesy Bacon and Potato Cups
1 package Simply Potatoes Traditional Mashed Potatoes
3 green onions (chopped)
1 package bacon
Cheddar cheese (cut in 1″ squares)
2 cans croissant rolls
Chop up the bacon and cook until crispy. Drain off grease and pat dry with a paper towel.
Open the cans of croissant rolls. Use two croissant roll triangles for each muffin tin cup. Roll them into a ball, flatten out and push down into each cup of a greased muffin tin.
Add some bacon to the bottom of each cup. Scoop out a large spoonful of potatoes from the Simply Potatoes package. Roll into a ball and press a couple squares of cheese into the center. Place on top of the bacon in each cup.
Sprinkle the tops of each cup with chopped onions and bacon. Place in a 350 degree oven for about 15 minutes until the croissant dough browns nicely.
These yummy potato cups make a great side dish, but would also do well as a party appetizer!
Cut one open and you have a creamy melted cheese surprise!

That looks great. I have many favorite side dishes, but one of my favorites is Spinach Madeline. My spinach hating children would ask for seconds of this cheese and garlic side dish.
These do look real good. Will have to give them a try real soon. I’m like you and always repeat the same things too often.
One of my favorites is Mac and cheese and can never serve too often. Lol

My Favorite side dish would is Kim Chee with Shrimp!!! (I learned how to make this, and I keep playing around with it, adding different things….It is an Asian side dish which is served with any type of an Asian meal)
